Materials

Fruit Filling

  • 4 medium apples peeled and sliced (Honeycrisp or Fuji work best)
  • 1.5 cups blueberries fresh or frozen
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp brown sugar

Crisp Topping

  • 1 cup rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 cup butter cold, cubed
  • salt Pinch

Optional Add-ins

  • 0.25 tsp nutmeg for extra warmth
  • 0.25 cup chopped pecans or walnuts for crunch

Instructions

  • Preheat the oven to 350°F (175°C) and lightly butter an 8x8-inch baking dish.
  • Prepare the fruit filling: In a large bowl, combine the sliced apples, blueberries, lemon juice, vanilla extract, cinnamon, and brown sugar. Toss gently until the fruit is evenly coated.
  • Make the topping: In another bowl, mix together oats, flour, brown sugar, and salt. Cut in the cold butter with a fork or pastry cutter until the mixture becomes crumbly and resembles coarse crumbs.
  • Assemble the crisp: Pour the fruit mixture into the prepared baking dish. Sprinkle the oat topping evenly over the fruit without pressing it down.
  • Bake: Place the dish in the oven and bake for 35–40 minutes, or until the topping is golden brown and the fruit is bubbling.
  • Cool and serve: Allow the crisp to cool for at least 10 minutes before serving. Enjoy warm with a scoop of vanilla ice cream, or chilled the next day with yogurt.

Notes

Make it healthier: Replace half the butter with unsweetened applesauce or coconut oil.
Make it gluten-free: Use certified gluten-free oats and substitute almond flour for all-purpose flour.
Make it dairy-free: Swap the butter for coconut oil or vegan butter.
Storage: Keep leftovers covered in the fridge for up to 4 days. Reheat in the oven for best texture.
Freezing: Freeze baked crisp for up to 2 months. Reheat from frozen at 325°F until warm.
