Ingredients
  

  • 1 cup apple cider (freshly pressed preferred)
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamo
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 4 tbsp butter (melted)
  • 1 large egg
  • 1/2 cup milk
  • Vegetable oil (for frying)
  • 1/2 cup + 1 tsp additional cinnamon sugar (for coating)

Instructions
 

  • Reduce the cider by boiling it in a saucepan until it reduces to about 1/2 cup. Allow it to cool slightly.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, whisk the melted butter, egg, milk, and cooled cider reduction together.
  • Combine the wet and dry ingredients, mixing until just combined.
  • Heat vegetable oil in a deep skillet or pot to 360°F (182°C).
  • On a floured surface, pat the dough to 1/2-inch thick and cut out the doughnuts using a cutter.
  • Fry the doughnuts in the hot oil for 2-3 minutes per side until golden brown.
  • Transfer to paper towels to drain and roll in cinnamon sugar while warm.

Notes

Use fresh high-quality apple cider for the best flavor. Let cider reduction cool to prevent cooking the eggs. Don't overcrowd the frying oil.
