Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamo
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and chopped
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt. Whisk until well mixed.
  • In another bowl, beat the eggs. Add the vegetable oil and vanilla extract, mixing until combined.
  • Gradually add the wet ingredients to the dry mixture, stirring gently until just combined.
  • Gently fold in the chopped apples and nuts (if using).
  • Transfer the batter to the prepared loaf pan, smoothing the top.
  • Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for about 10 minutes, then remove it to cool completely on a wire rack.
  • Once cooled, slice and enjoy.

Notes

Use room temperature ingredients for better mixing. Don't skip the cooling step to prevent a gummy texture. Check for firm apples like Granny Smith for the best flavor.
