Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamo
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups apples (peeled and diced)
  • 1/2 cup brown sugar
  • 1 tbsp lemon juice
  • 1/4 tsp ground nutmeg

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or using muffin liners.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, cream the softened butter until light and fluffy. Add the egg and vanilla extract and mix until smooth.
  • Gradually add the flour mixture to the wet mixture, stirring until just combined.
  • In another bowl, combine diced apples, brown sugar, lemon juice, cinnamon, and nutmeg. Mix until the apples are well-coated.
  • Take a rounded tablespoon of cookie dough and press it into each muffin cup, creating a well for the apple filling.
  • Fill each cookie cup with the apple mixture, pressing down gently to fit more in.
  • Bake for 18-20 minutes, or until golden brown and the apples are tender.
  • Let the cookie cups cool in the muffin tin for about 10 minutes before transferring them to a wire rack.

Notes

Always use room temperature ingredients for better incorporation. Consider using gluten-free flour for dietary restrictions. You can freeze unbaked cookie cups for future baking.
