Ingredients
  

  • 2 pounds beef stew meat
  • 3 medium carrots, peeled and chopped
  • 4 medium potatoes, diced
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 3 tablespoons tomato paste
  • 1 teaspoon thyme
  • 2 bay leaves
  • salt to taste
  • pepper to taste
  • 2 tablespoons olive oil
  • optional: fresh parsley, chopped for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium-high heat. Add the beef stew meat in batches, browning it evenly on all sides.
  • Remove the browned beef and set aside. In the same pot, add the chopped onions and sautĂ© until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  • Return the beef to the pot and blend it with the onions and garlic. Add the tomato paste and mix well.
  • Pour in the beef broth and season with thyme, bay leaves, salt, and pepper. Bring the mixture to a simmer.
  • Add the carrots and potatoes, cover the pot, reduce the heat to low, and let it cook gently for about 1.5 to 2 hours. Stir occasionally.
  • When the beef is tender and the vegetables are cooked through, taste for seasoning and adjust. Remove bay leaves before serving.
  • Serve hot, garnished with freshly chopped parsley if desired.

Notes

Refrigerate leftovers for up to three days, or freeze for up to three months. This stew tastes even better the next day.
