Ingredients
  

Rice Bowl

  • 2 cups cooked rice brown, white, or jasmine
  • 2 boneless skinless chicken breasts
  • 1 ripe avocado sliced
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach or mixed greens
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt to taste
  • black pepper to taste
  • 1 lime juiced

Optional Toppings

  • feta cheese
  • cilantro
  • hot sauce

Instructions
 

  • Gather all ingredients and chop the vegetables.
  • Cook the rice according to package directions if not already prepared.
  • Season the chicken with olive oil, garlic powder, paprika, salt, and pepper.
  • Cook the chicken in a skillet over medium-high heat for 7-8 minutes per side until it reaches an internal temperature of 165°F.
  • Let the chicken rest for a few minutes, then slice into strips.
  • Assemble the bowl with rice, greens, chicken, cherry tomatoes, avocado, and lime juice.
  • Add optional toppings such as feta cheese, cilantro, or hot sauce.
  • Serve immediately and enjoy.

Notes

Store leftovers in an airtight container for up to 3 days. Keep the avocado separate until serving to prevent browning. Reheat the chicken and rice before adding fresh vegetables and avocado.
