Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 2 teaspoons vanilla extract
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups milk

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan or line with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large mixing bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  • Mix in eggs one at a time until fully incorporated. Then, add mashed bananas and vanilla extract, blending until smooth.
  • Gradually add the flour mixture to the banana mixture, stirring just until combined.
  • In a separate bowl, whisk instant pudding mix with milk until thick and creamy.
  • Pour half of the cookie dough into the prepared baking pan, spread evenly, layer pudding mixture on top, followed by remaining cookie dough.
  • Bake for 25-30 minutes, or until edges are golden brown and toothpick comes out clean.
  • Allow to cool in the pan for at least 15 minutes before cutting into squares.

Notes

Use very ripe bananas for the best flavor. Store in an airtight container at room temperature for up to 5 days.
