  • Grease an 8-inch square baking pan.
  • In a mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Gradually incorporate all-purpose flour and salt into the butter mixture, mixing until just combined.
  • Pour the crumbly mixture into the prepared baking dish and press it down to form an even layer, then bake for about 15 minutes.
  • While the crust is baking, whisk together the eggs, lemon juice, lemon zest, and granulated sugar until smooth.
