  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon zest of blood oranges
  • 1/4 cup blood orange juice
  • 1/2 cup chopped whole almonds
  • 1/4 cup brown sugar
  • 4 tablespoons butter, melted

Instructions
 

  • Preheat the oven to 350°F (175°C) and prepare a muffin tin.
  • In a large bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  • In another bowl, mix the wet ingredients: milk, vegetable oil, egg, blood orange juice, and zest.
  • Combine the wet and dry ingredients gently until just mixed.
  • Fold in chopped almonds.
  • Make streusel by mixing melted butter, brown sugar, and flour until crumbly.
  • Fill muffin cups two-thirds full with batter and top with streusel.
  • Bake for 18-22 minutes until a toothpick comes out clean.
  • Cool for 5 minutes in the pan then transfer to a wire rack.
