  • 3/4 cup Granulated sugar
  • 1/4 cup Brown sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 cup Blueberries, fresh or froze

  • 1/2 cup Powdered sugar

  • In a large bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  • Gently fold in the blueberries.
  • In a small bowl, beat the softened cream cheese with powdered sugar until smooth.
  • Using a cookie scoop, drop a tablespoon of cookie dough onto a lined baking sheet. Press an indentation in the center and fill with cream cheese mixture.
  • Bake for 10-12 minutes until edges are golden and tops look set.
  • Cool on sheet for a few minutes before transferring to a wire rack.

Notes

Use room temperature ingredients for better blending. Chilling the dough helps prevent spreading. Store cookies in an airtight container at room temperature for 3-4 days or freeze for longer storage.
