Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup unsalted butter (melted)
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 16 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 2 cups blueberries (fresh or frozen)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a large bowl, combine flour, granulated sugar, brown sugar, oats, baking powder, and salt, mixing until well combined.
  • Pour in the melted butter and stir until the mixture resembles coarse crumbs, reserving a cup for topping.
  • In another bowl, beat cream cheese and sugar until smooth, then blend in egg, sour cream, and vanilla extract.
  • Spread the crumble mixture into the bottom of the prepared dish and press down firmly to create an even layer. Bake for 10 minutes.
  • Once baked, pour the cheesecake filling over the crust and smooth it out.
  • Scatter the blueberries over the cheesecake layer.
  • Sprinkle the reserved crumble mixture over the top and bake for an additional 30-35 minutes until set.
  • Cool at room temperature for at least 30 minutes, then refrigerate for a few hours before cutting into squares.

Notes

Ensure cream cheese is softened for a smooth filling. To prevent blueberries from sinking, toss them in flour before adding them to the cheesecake layer. Bars can be made a day in advance.
