  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 3/4 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Cut the cold butter into small cubes and blend it into the flour mixture until it resembles coarse crumbs.
  • In a separate bowl, combine the heavy cream, lemon juice, and lemon zest, then pour it into the dry ingredients and mix gently.
  • Fold in the blueberries carefully.
  • Turn the dough onto a floured surface and pat it into a circle about 1-inch thick. Cut into wedges or use a round cutter.
  • Place on the baking sheet and bake for about 15-18 minutes or until golden brown.
  • Cool slightly on a wire rack and enjoy warm.
