- 2 cups fresh blueberries
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C).
Grease a 9x13 inch baking dish or line it with parchment paper.
In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt. Stir until evenly mixed.
Incorporate the cubed butter into the dry ingredients using a fork or a pastry cutter until crumbly.
Add in the eggs, vanilla extract, lemon juice, and lemon zest. Stir gently until just combined.
Fold in the blueberries gently.
Pour half of the mixture into the prepared baking dish, spreading it evenly.
Add the second layer by spooning the remaining mixture over the top.
Bake for 30-35 minutes, or until the top is golden and a toothpick comes out clean.
Allow to cool completely in the pan before cutting.
Use high-quality, fresh blueberries for the best flavor. For gluten-free, substitute with a gluten-free flour blend.
Colder butter creates a flakier crust. Allow bars to cool completely for neat slices.
