Ingredients
  

  • 2 cups fresh or frozen blueberries
  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup plain yogurt (Greek or regular)
  • ½ cup butter, melted
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8 inch baking dish with parchment paper.
  • In a large bowl, whisk together the rolled oats, flour, brown sugar, baking powder, and salt.
  • Pour in the melted butter, yogurt, and vanilla extract. Stir until just combined.
  • Gently fold in the blueberries.
  • Pour half of the mixture into the prepared dish and press down firmly. Layer the remaining mixture over the blueberries and crumble the top evenly.
  • Bake for 30-35 minutes or until the edges are golden brown.
  • Allow to cool in the dish for at least 15 minutes before lifting out and cooling completely on a wire rack.
  • Slice into squares and enjoy.

Notes

Use fresh blueberries for best flavor; frozen will work too. Let chill overnight for enhanced flavor. Store in an airtight container in the fridge for up to a week.
