Ingredients
  

  • 4 (6-ounce) red snapper fillets
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 4 cloves garlic (minced)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 bell pepper (diced)
  • 1 onion (chopped)
  • 1 cup chicken broth
  • 2 tablespoons cilantro (chopped)
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions
 

  • Season red snapper fillets with Cajun seasoning, salt, and pepper.
  • Heat olive oil in a skillet over medium heat and cook the fillets for about 4 minutes per side until flaky.
  • Remove the fillets and set aside. In the same skillet, sauté onion and bell pepper until softened.
  • Add minced garlic and cook until golden.
  • Stir in diced tomatoes and chicken broth, then bring to a simmer.
  • Return red snapper to the skillet and simmer for 5 minutes.
  • Add chopped cilantro and lemon juice before serving.
