  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 teaspoons cinnamo
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 cups peaches, peeled and diced
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
  • Brown the butter in a medium saucepan over medium heat, stirring frequently until it melts and starts to foam, about 5-7 minutes.
  • In a large mixing bowl, combine the granulated sugar, brown sugar, and cooled brown butter. Mix well.
  • Add the vanilla extract and stir until incorporated.
  • In another bowl, whisk together the flour, oats, cinnamon, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  • Reserve about 1 cup of the mixture for the streusel topping. Press the remaining mixture into the bottom of the prepared pan to form the base.
  • In a separate bowl, toss the diced peaches with lemon juice. Spread the peach mixture evenly over the crust.
  • Sprinkle the reserved crumb mixture evenly over the peaches.
  • Bake for 35-40 minutes or until the top is golden brown and crisp.
  • Allow the bars to cool completely before cutting into squares.

Notes

Ensure the butter is cooled before mixing with sugars. Use ripe but firm peaches for best flavor. Don't overmix the streusel topping. Let bars cool for best slicing results.
