- 2 medium apples 1 grated, 1 diced
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1/4 cup butter softened
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup milk
- 1/2 cup chopped pecans optional
- 1/2 cup caramel sauce for drizzle
Preheat oven to 350°F (175°C). Grease and line a 9x5 loaf pan.
In a medium bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
In a large bowl, beat butter, oil, and brown sugar until creamy. Add eggs one at a time, then stir in vanilla.
Gradually add the dry mixture, alternating with milk, mixing until just combined.
Fold in grated and diced apples, plus pecans if using.
Pour batter into loaf pan and smooth the top.
Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Let loaf cool for 15 minutes. Drizzle warm caramel sauce over the top.
Slice and serve warm or cooled.
For extra indulgence, serve with vanilla ice cream.
Swap pecans with walnuts or leave them out for a nut-free version.
Store leftovers in an airtight container at room temperature for 2 days, or refrigerate up to 5 days.
