  • 2 medium apples 1 grated, 1 diced
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 1/4 cup butter softened
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 cup chopped pecans optional
  • 1/2 cup caramel sauce for drizzle

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line a 9x5 loaf pan.
  • In a medium bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
  • In a large bowl, beat butter, oil, and brown sugar until creamy. Add eggs one at a time, then stir in vanilla.
  • Gradually add the dry mixture, alternating with milk, mixing until just combined.
  • Fold in grated and diced apples, plus pecans if using.
  • Pour batter into loaf pan and smooth the top.
  • Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let loaf cool for 15 minutes. Drizzle warm caramel sauce over the top.
  • Slice and serve warm or cooled.

Notes

For extra indulgence, serve with vanilla ice cream.
Swap pecans with walnuts or leave them out for a nut-free version.
Store leftovers in an airtight container at room temperature for 2 days, or refrigerate up to 5 days.
