Instructions
Wash the carrots thoroughly and peel if preferred. Use a vegetable peeler to create long, thin ribbons.
Finely chop the parsley and mint, then combine them in a medium bowl.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
