  • 2 cups all-purpose flour
  • ¾ cup warm water
  • 1 packet (2¼ teaspoons) active dry yeast
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 2 cups spinach (fresh or frozen)
  • 8 ounces cream cheese
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions
 

  • In a mixing bowl, combine warm water and yeast. Allow it to sit for about 5 minutes until it becomes frothy.
  • In a separate bowl, mix together the all-purpose flour and salt. Gradually add the yeast mixture and olive oil. Stir until a dough forms.
  • Knead the dough for about 5-7 minutes on a floured surface until smooth and elastic.
  • Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour.
  • While the dough is rising, sauté garlic in olive oil until fragrant, then add spinach and cook until wilted.
  • Remove spinach from heat and let it cool. Mix it with cream cheese, mozzarella, black pepper, and red pepper flakes.
  • Preheat a skillet over medium heat. Once the dough has risen, punch it down and divide it into four equal portions.
  • Roll each portion into a flat round shape, about ¼ inch thick.
  • Spoon filling onto one half of the round, fold the other half over, and pinch the edges to seal.
  • Cook the stuffed flatbread in the skillet for 3-4 minutes on each side until golden brown.
  • Slice the flatbread and serve warm.

Notes

For a quicker option, use store-bought dough. You can prepare the filling ahead of time to save time on busy nights. Keep an eye on the skillet temperature to avoid burning.
