Ingredients
  

  • 1 pound sirloin or flank steak, thinly sliced
  • 2 cups cooked rice (white or brown)
  • 1 cup queso cheese sauce
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add diced onions and bell peppers and sauté until softened, about 5 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Increase heat to high and add the thinly sliced steak to the skillet. Season with chili powder, salt, and pepper. Cook until browned and cooked to desired doneness, about 5-7 minutes.
  • While steak cooks, reheat queso cheese sauce in a small saucepan over low heat, stirring frequently.
  • Once steak is ready, remove skillet from heat and layer cooked rice as a base in serving bowls.
  • Top the rice with the sautéed steak mixture, including the sautéed vegetables.
  • Drizzle with warm queso cheese sauce and garnish with fresh cilantro if desired.
  • Serve immediately while hot and cheesy!

Notes

Cooking time can be reduced by using pre-cooked rice. Leftovers can be stored in the refrigerator for up to 3 days.
