Ingredients
  

  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon cumi
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon lime juice
  • ¼ cup fresh cilantro, chopped
  • 8 small corn tortillas
  • 1 cup pico de gallo or fresh salsa
  • 1 cup shredded lettuce
  • 1 avocado, sliced (optional)

Instructions
 

  • In a bowl, combine olive oil, cumin, chili powder, garlic powder, salt, pepper, and lime juice. Add the chicken, turning to coat well. Marinate for at least 15 minutes.
  • Prepare toppings by chopping cilantro, slicing avocado, and setting out lettuce and pico de gallo.
  • Preheat grill or stovetop grill pan over medium-high heat. Cook marinated chicken for about 6-7 minutes per side until it reaches 165°F and has grill marks.
  • Remove chicken from grill, let rest for a few minutes, then slice into strips or cubes.
  • Heat corn tortillas on the grill for 30 seconds on each side.
  • Assemble tacos with chicken, shredded lettuce, pico de gallo, chopped cilantro, and sliced avocado.
  • Squeeze fresh lime juice on top and serve immediately.

Notes

To save time, marinate chicken ahead of time. You can use chicken thighs instead of breasts for more flavor. For a gluten-free option, swap corn tortillas for gluten-free wraps.
