Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 tablespoons fresh herbs (e.g., parsley or thyme), chopped

Instructions

  • Season the chicken breasts generously with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in chicken broth, scraping any brown bits from the skillet. Bring to a gentle simmer.
  • Add softened cream cheese to the skillet, stirring until completely melted and blended with the broth.
  • Return chicken to the skillet and soak in the sauce for about 2-3 minutes.
  • Stir in fresh herbs and adjust seasoning as needed.
  • Serve hot, drizzled with the creamy sauce.

Notes

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. Let chicken rest before slicing for juicy results. Store leftovers in an airtight container for up to 3 days.
