Ingredients
  

  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes, with juice
  • 2-3 chipotle peppers in adobo sauce, finely chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 tablespoons chili powder
  • 1 tablespoon cumi
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste
  • 1 cup water or broth

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté until the onion is soft and translucent, about 5 minutes.
  • Add the minced garlic and chopped chipotle peppers. Sauté for another minute until fragrant.
  • Increase the heat to medium-high and add the ground beef or turkey. Cook until browned, breaking it apart with a spoon, about 7-10 minutes.
  • Once browned, stir in the chili powder, cumin, salt, and black pepper. Mix well to coat the meat and vegetables with spices.
  • Add the diced tomatoes, black beans, kidney beans, and broth or water. Stir everything together until well combined.
  • Bring the mixture to a simmer. Reduce the heat to low and cover the pot. Let it cook for about 20-30 minutes, allowing the flavors to meld.
  • Before serving, taste the chili and adjust seasoning if necessary. If you love heat, feel free to add more chipotle or chili powder.

Notes

For the best flavor, use high-quality diced tomatoes and fresh spices. Don’t skip browning the meat well. Prepare a big batch, as this dish freezes beautifully. Let the chili sit for a few hours or overnight before serving—it gets better with time!
