Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup Biscoff spread (for frosting and filling)
  • 1 cup heavy cream (for frosting)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans, or line them with parchment paper.
  • In a large mixing bowl, combine the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk the dry ingredients together until well blended.
  • In another mixing bowl, whisk the eggs, milk, vegetable oil, and vanilla extract together until smooth.
  • Pour the wet mixture into the dry ingredients and mix until just combined. Then, slowly add in the boiling water and mix until the batter is smooth (the batter will be thin).
  • Divide the batter evenly between the prepared baking pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  • While the cakes cool, prepare the frosting. In a mixing bowl, beat the heavy cream until stiff peaks form. Gently fold in the Biscoff spread until well combined.
  • Once the cakes are completely cooled, level the tops with a knife if needed, then place one layer on a serving plate. Spread a layer of Biscoff frosting on top.
  • Carefully place the second layer on top, and use the remaining frosting to cover the entire cake. Feel free to decorate the cake with crushed Biscoff cookies for extra texture!

Notes

Make sure your eggs and milk are at room temperature. Don’t skip the boiling water step. For easy frosting, crumb coat the cake first. Experiment with various toppings; sprinkling chocolate shavings or crushed cookies can enhance presentation. Always let your cakes cool completely before frosting to avoid melting your frosting.
