  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups old-fashioned oats
  • 1 cup semi-sweet chocolate chunks

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line two baking sheets with parchment paper.
  • In a large bowl, beat the softened unsalted butter, brown sugar, and granulated sugar together until creamy.
  • Mix in the eggs, one at a time, and then add the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt. Slowly add to the wet ingredients, stirring until just combined.
  • Gently fold in the oats and chocolate chunks.
  • Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to one week. For a longer storage option, freeze the cookies in an airtight container or a freezer bag for up to three months.
