  • 3 medium overripe bananas
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamo
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup butter, melted

Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it.
  • In a large mixing bowl, mash the overripe bananas until smooth.
  • Stir in the sugar, eggs, and vanilla until thoroughly combined.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Gradually fold the dry ingredients into the banana mixture until just combined.
  • Gently fold in the chocolate chips.
  • Divide the batter evenly among the muffin tin, filling each cup about 2/3 full.
  • Bake for 18 to 22 minutes, or until a toothpick comes out clean or with a few moist crumbs.
  • Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for maximum sweetness and flavor. Don't skip the cinnamon for depth of flavor. For a fun twist, add a sprinkle of coarse sea salt on top before baking. You can mix everything in one bowl for quick cleanup, but fold gently to avoid dense muffins. Freeze half the batch for later enjoyment.
