Ingredients
  

  • 2 cups rolled oats
  • 1 cup shredded coconut (unsweetened)
  • 1 cup chocolate chips (dark or semi-sweet)
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
  • In a large mixing bowl, combine the rolled oats and shredded coconut.
  • Melt the chocolate chips, peanut butter, honey, and salt together until smooth.
  • Pour the chocolate mixture over the oat and coconut blend and stir well.
  • Transfer the mixture to the prepared pan and press down firmly.
  • Bake for 20-25 minutes until set but not overly browned.
  • Allow cooling before cutting into squares.

Notes

Store in an airtight container in the fridge for up to a week. You can freeze them for longer storage.
