Ingredients
  

  • 2 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips (for filling)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer. Beat until the mixture is light and fluffy, about 2-3 minutes.
  • Add the vanilla extract and eggs to the butter-sugar mixture. Beat until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; stop as soon as the flour is incorporated.
  • Using a tablespoon or ice cream scoop, portion out the cookie dough onto the prepared baking sheet, leaving enough space between each mound.
  • Using your thumb or the back of a spoon, make an indentation in the center of each dough ball. Place a chocolate chip in this indentation, ensuring it is well-covered with dough.
  • Bake in the preheated oven for about 10-12 minutes, or until the edges are set but the centers are still soft. The cookies will continue to firm up as they cool.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use room temperature butter for better texture. Chill dough if your kitchen is warm. Experiment with different chocolate types for filling.
