Ingredients
  

  • 1 ½ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup chocolate chips (semi-sweet)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners or grease it lightly.
  • In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, beat the eggs. Then add the buttermilk, vegetable oil, and vanilla extract. Mix until everything is combined.
  • Pour the wet mixture into the dry ingredients and gently fold until just combined.
  • Add the chocolate chips and stir gently.
  • Scoop the batter evenly into the cupcake liners, filling each about ¾ full.
  • Bake in the preheated oven for 18-20 minutes. Check for doneness with a toothpick.
  • Let the cupcakes cool in the pan for about 5 minutes before transferring to a wire rack.
  • Once cooled, decorate with frosting or enjoy simply with powdered sugar.

Notes

Use room temperature ingredients for a smoother batter. Don't skip the cooling step to prevent sogginess. For a unique taste, try flavored extracts. Store in an airtight container at room temperature for up to 4 days.
