Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups powdered sugar
  • ½ cup peanut butter
  • 2 tablespoons heavy cream
  • ½ cup chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
  • In a large bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking soda, and salt. Whisk together.
  • In another bowl, mix the vegetable oil, eggs, vanilla extract, and milk until well combined.
  • Pour the wet mixture into the dry mixture. Stir gently until there are no dry streaks.
  • Fold in chocolate chips if using.
  • Fill each cupcake liner about ⅔ full with the batter.
  • Bake for 18-20 minutes. Check for doneness with a toothpick.
  • Remove from the oven and let cool for 5 minutes, then transfer to a wire rack to cool completely.
  • Prepare the peanut butter frosting by beating together peanut butter, powdered sugar, and heavy cream until smooth.
  • Once cooled, frost each cupcake with the peanut butter frosting.

Notes

Use room temperature ingredients for better blending. Don’t overmix the batter. Allow cupcakes to cool completely before frosting.
