Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, sliced
  • whipped cream for topping

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two round 9-inch cake pans.
  • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • Stir in the granulated sugar until combined.
  • Create a well in the center; add the eggs, milk, vegetable oil, and vanilla extract. Whisk until smooth.
  • Slowly pour in the boiling water and mix until everything is combined.
  • Gently fold in the sliced strawberries.
  • Divide the batter evenly between the prepared pans.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  • Once cool, layer the cakes with whipped cream and extra strawberries in between, and on top.

Notes

Use room temperature ingredients for better mixing. Measure flour properly to avoid a dense cake. Don't open the oven door too soon to ensure uniform baking. You can store any leftovers in the fridge for up to four days.
