Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamo
  • 1 cup granulated sugar
  • 1 large egg
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar + 1 tablespoon ground cinnamon for coating

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a muffin tin or line with paper liners.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and granulated sugar.
  • In another bowl, whisk the egg, then add the milk, melted butter, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Fill each muffin cup about 2/3 full with batter.
  • Bake for 15 to 18 minutes, until a toothpick comes out clean.
  • In a shallow dish, mix the granulated sugar and cinnamon for coating.
  • Let the muffins cool for about 5 minutes, then roll in the cinnamon sugar mixture.
  • Allow to cool slightly on a wire rack before serving.

Notes

Avoid overmixing the batter for fluffier muffins. Store in an airtight container at room temperature for 3 days or freeze for up to 3 months.
