Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan, or line it with parchment paper.
  • In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in granulated sugar and brown sugar until combined.
  • Once the butter and sugar mixture has cooled slightly, whisk in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, mix the all-purpose flour, cocoa powder, and salt together. Gradually add this dry mixture into the wet ingredients, stirring gently just until combined.
  • Fold in the sweetened shredded coconut gently.
  • Pour the brownie batter into your prepared baking pan, spreading it evenly.
  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Let the Coconut Brownies cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, slice into squares.
