Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup coconut milk (canned)
  • 1 large mango, diced
  • 2 tablespoons maple syrup or honey (optional)
  • 1 teaspoon vanilla extract
  • 2 tablespoons shredded coconut (for topping)

Instructions
 

  • In a medium-sized bowl, combine the chia seeds with the coconut milk, maple syrup (if using), and vanilla extract. Stir until the chia seeds are well incorporated. Allow the mixture to sit for about five minutes and then stir again.
  • Cover the bowl and place it in the refrigerator. Let the mixture chill for at least 2 hours or overnight.
  • Once the chia pudding has thickened, start assembling your parfaits with a layer of chia pudding at the bottom of each serving glass.
  • Add a layer of diced mango on top of the chia pudding. Repeat the layers until the glasses are filled, then top with shredded coconut.
  • Serve immediately or store in the fridge for later.

Notes

Make sure to use ripe mangoes for the best flavor. You can store leftover parfaits in an airtight container in the fridge for up to five days.
