Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamo
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1 tablespoon orange zest

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix the oats, flour, baking soda, cinnamon, and salt.
  • In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture and mix well.
  • Gradually add the dry ingredients to the wet ingredients and stir until combined.
  • Fold in the dried cranberries and orange zest.
  • Drop spoonfuls of the cookie dough onto the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.
