  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 tsp ground nutmeg
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil or butter

  • Start by cooking the pasta according to the package instructions. Salt the boiling water generously for flavor. Drain and set aside, reserving a cup of pasta water.
  • In a large skillet over medium heat, add olive oil or butter. Once hot, add minced garlic and sauté until fragrant, about 30 seconds.
  • Add pumpkin puree to the skillet, stirring to combine with the garlic. Cook for 2-3 minutes to heat through.
  • Pour in heavy cream and stir until combined; simmer gently for about 5 minutes.
  • Gradually whisk in grated Parmesan cheese until melted and smooth. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
  • Add ground nutmeg, salt, and pepper. Adjust seasoning if necessary.
  • Toss cooked pasta in the sauce until thoroughly coated. Serve immediately, garnished with additional Parmesan if desired.
