Ingredients
  

  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • ½ cup heavy cream
  • ¼ cup fresh parsley (chopped)
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste
  • 4 large flour tortillas
  • 2 cups mixed salad greens

Instructions
 

  • Start by rinsing the shrimp under cold water. Pat them dry with a kitchen towel. Season them lightly with salt and pepper.
  • In a large skillet, heat olive oil over medium heat. Once hot, add the shrimp to the pan.
  • Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove them from the skillet and set aside.
  • In the same skillet, add minced garlic. Sauté for about 30 seconds.
  • Pour in the heavy cream and stir to combine with the garlic. Let it simmer for a couple of minutes.
  • Add lemon juice and stir to incorporate. Return the cooked shrimp to the skillet, tossing them in the creamy sauce.
  • Add chopped parsley and stir to combine everything.
  • Lay out the tortillas and place a handful of mixed greens in the center of each. Top with the shrimp mixture.
  • Fold the sides of the tortilla over the filling, then roll it from the bottom up.
  • Cut the wraps in half if desired and serve immediately.

Notes

Prep ingredients ahead of time. Using frozen shrimp? Ensure to thaw them completely before cooking. This wrap can be made ahead and stored, allowing for quick weekday meals.
