Ingredients
  

  • 2 pieces Chicken breast
  • 2 Ripe avocados
  • 4 cups Mixed salad greens
  • 1 cup Cherry tomatoes
  • 1 Cucumber, sliced
  • 3 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Pat the chicken breast dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat, then cook the chicken breasts for 6-7 minutes on each side until golden brown.
  • Let the chicken rest for at least 5 minutes, then slice.
  • In a bowl, combine mixed greens, cucumber slices, and halved cherry tomatoes.
  • Slice the avocados into wedges.
  • Top the salad with sliced chicken and avocado.
  • Drizzle with olive oil and lemon juice, then add salt and pepper to taste.

Notes

Use a sharp knife for slicing chicken. Marinate chicken overnight for more flavor. Store leftovers in an airtight container.
