Ingredients
  

  • 12 oz tortellini (fresh or frozen)
  • 1 lb sliced beef (such as flank steak or sirloin)
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • Salt and pepper to taste

Instructions
 

  • Place sliced beef, onion, and bell pepper in the bottom of the crock pot.
  • Pour beef broth over the top and season with salt and pepper.
  • Cover and cook on low for 2 hours.
  • Add tortellini and heavy cream, stir to combine.
  • Cover and cook on low for another 30-60 minutes until tortellini are cooked.
  • Stir in provolone cheese until melted before serving.

Notes

Use a good quality beef for the best flavor. You can also add mushrooms or other vegetables if desired.
