Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar + more for sprinkling
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup coconut oil or dairy-free butter (melted)
  • ¼ cup non-dairy milk (almond, soy, etc.)
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the all-purpose flour, baking soda, and salt.
  • In another bowl, mix the melted coconut oil (or dairy-free butter), non-dairy milk, vanilla extract, and sugar until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined and knead gently to form a dough.
  • Wrap the dough in plastic wrap and chill in the fridge for about 30 minutes.
  • Scoop tablespoon-sized balls of dough, roll into smooth balls, and place them on a lined baking sheet.
  • Flatten each ball gently with the bottom of a glass dipped in sugar.
  • Bake in the preheated oven for 10-12 minutes until the edges are lightly golden, then cool on a wire rack.

Notes

Make sure your ingredients are at room temperature for easy mixing. Chilling the dough enhances flavor and prevents spreading. Store cookies in an airtight container for up to a week.
