A simple baked nectarine dessert made with ripe nectarines, a light vanilla batter, and warm cinnamon. Perfect served warm with vanilla ice cream for an easy summer treat.

Ingredients
  

Batter

  • 4-6 ripe nectarines sliced into wedges
  • 1/2 cup sugar
  • 1/2 cup butter melted
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 cup milk
  • 1/4 cup walnuts chopped, optional
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Wash and slice the nectarines into wedges. Peel if desired.
  • In a bowl, whisk together the sugar, flour, cinnamon, and baking powder.
  • In a separate bowl, combine the melted butter, milk, and vanilla extract.
  • Gradually mix the wet ingredients into the dry ingredients until just combined.
  • Fold the sliced nectarines into the batter and add walnuts if using.
  • Pour the mixture into a greased baking dish and spread evenly.
  • Bake for 30–35 minutes until golden and a toothpick inserted into the center comes out clean.
  • Cool slightly before serving. Enjoy warm or at room temperature, optionally with vanilla ice cream.

Notes

Use ripe nectarines for the best flavor. Peaches or apricots make excellent substitutes. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in a 350°F oven for 10–15 minutes or microwave individual servings for 30–60 seconds.
