  • 1 pound chicken breast, cubed
  • 2 cups broccoli florets
  • 8 ounces pasta (penne or rotini)
  • 2 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • ¼ cup Parmesan cheese, grated (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the cubed chicken breast, season with salt and pepper, and sauté for about 5-7 minutes until golden brown.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth and add uncooked pasta. Stir to combine and bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for about 10-12 minutes until pasta is al dente and most liquid is absorbed.
  • Add broccoli florets, stir in shredded cheddar cheese, and let it melt to create a creamy sauce over medium heat.
  • Sprinkle grated Parmesan on top if desired, give everything a final stir, and serve hot.
