  • 3 medium ripe bananas
  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • ½ cup milk (dairy, almond, or soy)
  • ½ teaspoon cinnamon powder (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a 9-inch round cake pan or line it with parchment paper.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  • Add the oil, sugar, milk, and vanilla extract to the mashed bananas and whisk until smooth.
  • In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Gradually add the dry mixture into the wet ingredients, stirring gently until just combined.
  • Transfer the batter into the prepared baking pan and smooth the top.
  • Bake for about 30-35 minutes, or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
