Ingredients
  

  • 4 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • ¾ cup brown sugar, packed
  • ½ cup butter, softened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the chopped rhubarb and sugar. Toss gently to coat and let it sit for about 15 minutes.
  • In another bowl, combine the flour, oats, brown sugar, baking powder, and salt. Mix until well combined.
  • Add the softened butter and vanilla extract to the flour mixture. Blend until it resembles coarse crumbs.
  • Pour the rhubarb mixture into a greased 9x13 inch baking dish.
  • Spread the crumble topping evenly over the rhubarb, covering it well.
  • Bake for 35-40 minutes until the topping is golden brown and the filling is bubbling.
  • Let it cool slightly before serving. Enjoy warm or at room temperature.

Notes

Use fresh rhubarb for best flavor. Can be prepared a day in advance. Store in the fridge for up to 5 days.
