Ingredients
  

  • 1 cup (227g) unsalted butter, melted
  • 1 cup (120g) all-purpose flour
  • 2/3 cup (135g) granulated sugar
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 tsp baking powder
  • 1 cup (170g) white chocolate, for dipping
  • Dark chocolate or chocolate chips for decorating (eyes)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease your madeleine pan with non-stick spray or butter.
  • In a large mixing bowl, whisk together the eggs and granulated sugar until pale and fluffy (about 3-5 minutes).
  • Fold in the melted butter, almond extract, and vanilla extract until well combined.
  • In a separate bowl, sift together the all-purpose flour and baking powder; gently fold this into the wet mixture.
  • Spoon the batter into the mold, filling each cavity about three-quarters full.
  • Bake for 12-15 minutes, until golden brown and the centers spring back when touched.
  • Cool for a few minutes before transferring to a wire rack.
  • Melt the white chocolate in a microwave-safe bowl, then dip the cooled madeleines, allowing excess to drip off.
  • Decorate with melted dark chocolate or chocolate chips for eyes.
  • Serve fresh or store in an airtight container.

Notes

Use room temperature ingredients for better mixing. Do not overmix to keep madeleines light. Chill the batter for 30 minutes for optimal shape. Decorate creatively and consider freezing leftovers for up to three months.
