Honey Balsamic Chicken, Creamy Mashed Potatoes

Ingredients
  

  • 4 chicken breasts
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Salt to taste
  • Pepper to taste
  • 2 pounds potatoes, peeled and diced
  • 1/4 cup butter
  • 1/2 cup milk
  • Chives, chopped for garnish

Instructions
 

  • Season the chicken breasts with salt and pepper on all sides.
  • In a skillet, heat olive oil over medium-high heat. Add the seasoned chicken and sear for 5-7 minutes on each side until golden brown. Remove from the pan.
  • In the same skillet, add minced garlic and sauté for about a minute until fragrant.
  • Pour in honey and balsamic vinegar, stir and let simmer for 2-3 minutes.
  • Return chicken to the skillet, coat with glaze, cover, and cook for 10-12 minutes until cooked through.
  • For mashed potatoes, boil diced potatoes in water until tender (15-20 minutes). Drain and return to the pot.
  • Add butter and milk to the potatoes, mash until creamy. Season with salt and pepper.
  • Serve chicken over mashed potatoes, drizzled with extra glaze, and garnish with fresh chives.

Notes

For extra tender chicken, marinate it in the honey and balsamic mixture for a few hours before cooking. Store leftovers in an airtight container for up to 3-4 days.
