Ingredients

  • 4 medium cucumbers
  • 1/4 cup honey
  • 2 tablespoons Sriracha sauce
  • 1 cup white vinegar
  • 2 garlic cloves, smashed
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • A few sprigs fresh dill (optional)

Instructions

  • Wash the cucumbers thoroughly and slice them into rounds or spears.
  • In a medium bowl, whisk together the white vinegar, honey, and Sriracha sauce until fully combined.
  • Layer the sliced cucumbers, smashed garlic cloves, black peppercorns, mustard seeds, and fresh dill in a clean glass jar.
  • Pour the honey Sriracha mixture over the cucumbers, ensuring they are submerged in the liquid.
  • Seal the jar tightly with a lid and shake gently.
  • Refrigerate for at least 24 hours before enjoying.

Notes

Choose fresh, firm cucumbers for the best crunch. Letting the pickles marinate overnight is ideal. Use a funnel when pouring the pickling liquid into the jar to avoid spills.
