Ingredients
  

  • 4 chicken thighs (bone-in and skin-on)
  • 1 cup apple cider
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
  • Add chicken thighs skin side down to the hot oil, searing for about 5 minutes until golden brown. Flip and sear for another 3-4 minutes. Remove and set aside.
  • In the same skillet, sauté sliced onion and minced garlic until the onion is soft and translucent, about 3-4 minutes.
  • Pour in apple cider and stir to combine, bringing it to a gentle simmer.
  • Add chopped rosemary to the cider mixture, then return the seared chicken thighs skin side up into the skillet, immersing them in the sauce.
  • Cover and reduce heat to low, simmering for 30-35 minutes until the chicken is cooked through and juices run clear.
  • Remove the lid in the last 10 minutes to allow the sauce to reduce slightly.
  • Serve immediately, spooning sauce over chicken.

Notes

For best results, let the chicken reach room temperature before cooking. Use a meat thermometer to check for 165°F internal temperature.
