Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1 cup fresh berries (blueberries, raspberries, or strawberries)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, beat the softened butter until fluffy then mix in the sugar until creamy.
  • Beat in the eggs one at a time, then stir in lemon zest and juice.
  • Gradually add the dry ingredients to the wet ingredients, alternating with milk.
  • Fold in the berries gently to maintain their shape.
  • Pour the batter into the loaf pan and smooth the top.
  • Bake for 50-60 minutes, checking for doneness with a toothpick.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Make sure to use fresh ingredients for the best flavor. You can substitute fresh berries with frozen without thawing. The loaf can be frozen for up to three months.
