  • ½ teaspoon salt
  • ¾ cup (1 ½ sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest
  • 1 cup blueberries (fresh or frozen)
  • Powdered sugar (for dusting, optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line two baking sheets with parchment paper or silicone baking mats.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and lemon zest until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring gently.
  • Fold in the blueberries.
  • Scoop the dough onto the prepared baking sheets.
  • Bake for 10-12 minutes, until the edges turn light golden brown.
  • Cool on the baking sheets for 5 minutes before transferring to wire racks.

Notes

Use room temperature ingredients for better mixing. Chill the dough for thicker cookies. Ensure blueberries are dry before using.
